A quick meal and a quicker side


I'm a big fan of trying out recipes found on the back of ingredients like shredded cheese, soup cans, cracker boxes, etc. In fact, I have, on more than one occasion, changed my dinner plan on the spot if a recipe I read in the grocery store sounds quick and delish.

The recipe I'm sharing today, I found on the back of a mayo jar. It had 4 ingredients, was super easy, and sounded interesting, so I made it that night.

Parmesan Chicken

Ingredients:
2 Boneless , Skinless Chicken Breasts
Kraft Mayonaise with Olive Oil
Pregresso Italian Style Bread Crumbs
Freshly Grated Parmesan

There were measurements, but I didn't use them.

Directions:
Preheat oven to 350. Cut the chicken breasts in half, and remove excess fat. Cover with mayo on both sides. Place in baking dish. Sprinkle with bread crumbs. Cover with parmesan cheese. Bake, uncovered, for 25-30 minutes.



I served it with Rice-a-Roni Rice Pilaf and Costco's organic green beans.


No Fuss Corn on the Cob
Now it's quite possible that I am the only one who did not know about this genius way to make corn on the cob, but ever since my friend Andrea told me about it, I haven't made it any other way.

What you need:
Corn on the cob (don't be shy on the number you make, Matt and I can down some COTC) ;)
wax paper
microwave


What to do:
Shuck corn and roll in wax paper until completely covered. Place in microwave for 1 1/2-2 minutes. Uncover wax paper and serve (if you're like Matt) or cover with excessive amounts butter and salt (if you're like me).


I mean, seriously, this was like a I-finally-figured-out-how-to-make-banana-bread-gooey-in-the-middle moment for me! The corn seriously tastes perfect! No boiling water, no grill. Two minutes and you're DONE.

Now be honest, am I the last person on the face of the earth to learn this trick?

  3. I didn't know that about corn on the cob and I always forget to put them on so we end up having them after out main course! Maybe we will now eat them with our meals in future, thanks!!
