Fig, Balsamic & Goat Cheese Pasta


Figs and goat cheese are often paired together for flat breads and pizzas, so I decided to put them together in this grilled chicken and pasta dish, and the result was yum-my!

Ingredients:
2 chicken breasts
2T fig butter (found at Trader Joe's)
1T balsamic vinegar
garlic salt
1/2 sweet onions, chopped
2 cloves garlic, minced
1.5 cups white wine
3/4 cup heavy cream
1/4tsp salt
1/8tsp pepper
1.5T goat cheese
1/4 cup freshly grated parmesan
2T butter
3/4lb spaghetti

Directions:

Chicken:
Trim excess fat from chicken and sprinkle with garlic salt on both sides. Mix fig butter and balsamic vinegar together. Spread on chicken with a basting brush. Allow to marinate for at least one hour (I marinated mine overnight).

Grill over medium heat for 6-7 minutes on each side, or until the internal temperature reaches 160 degrees.

Sauce:
Saute onions in wine for 10 minutes on medium heat (the wine should simmer but not boil). Add garlic, heavy cream, salt and pepper. Simmer for 5 more minutes. Add in goat cheese and parmesan and stir until blended. Reduce heat to low, cut butter in half so you have two 1T cubes, and add to sauce. Stir occasionally while pasta and chicken cook.

Pasta:
Boil salted water. Cook Spaghetti to al dente. Drain and return to pan. Add sauce and mix.


Plate pasta. Slice chicken and add on top. Drizzle balsamic glaze over chicken and garnish with fresh parmesan.

Our once-a-month routine


One Wednesday a month, Matt takes off of work to spend the day with us. He came up with this idea a few months ago, and since he more-or-less works for himself, he has the ability to plan his schedule and do fun things like this for us. And we love it!

Last Wednesday, we decided to try out a new park in Alpharetta called Newtown Park, and brought the whole family, Tal included, along for the fun.

Hanging with daddy in the front while I load up the car- the fun starts right away on these days! (sitting in the front is a big deal for this little guy) ;)

Tell Tal he is not a lap dog and he will prove you wrong.

Lunch break!

After lunch, we walked across the street to a fire station so Ryan could see a fire truck up close, and the nicest firemen came out to give Ryan the full experience of seeing a fire station for the first time. It was so sweet! But I was so busy catching pictures of Ryan exploring everything that I completely forgot to get a picture of the actual fire fighters, ha- I promise, they were there. ;)

They let him get up in the fire truck and ambulance and pretend like he was driving the trucks. He loved it!

Natalie Grace- 2 Months




Two Month Stats:

We are so in love with this little peanut.

I say it all the time, but she is just the sweetest little baby.

She is spoiling all of us with her love of a routine and her love of getting a good night's sleep.

She likes spreading out her feeds during the day, enjoys looking around and smiling during her wake-time, and more often than not doses off to sleep peacefully when she's ready for a snooze.

At night, she likes getting her bath, eating her last meal, and staring up at the walls in her room and the patterns of her crib before falling asleep. She is such a content little sweet pea!
