Recipes: Banana Raspberry Smoothie and Beef Stroganoff

I wouldn't recommend eating these together, but here's two yummy recipes from this past week. =)

Banana Raspberry Smoothie:
I had some leftover raspberries from my 4th of July treats, so I decided to add them to my traditional banana smoothie. It was delicious! You can add any other fruit you want in place of the raspberries, or just make it the way I typically do, with just bananas and peanut butter.

 What you need (all measurements are approximate-I've never measured this!): 
2 bananas
Handful of raspberries (substitute any other fruit or leave out)
Hunk of peanut butter (I stick a knife in the jar, scoop, and plop it in the blender)
1 cup milk
2 tbsp honey
1 tsp vanilla
Few cubes of ice

Blend and enjoy!

Beef Stroganoff:

Sauté Onions with fresh garlic, Smart Balance butter, and EVOO. While sautéing, cook one pound of egg noodles according to the package.

Brown meat and drain.

Return the meat and onions to the pan and add one can of Cream of Chicken and one can of Cream of Mushroom soup. Pour approximately 1/4 cup of milk into the skillet and mix until blended.

Add cooked egg noodles and mix. Add a few dallops (such a good word :) ) of sour cream and approximately 2 tsp of honey dijon dressing (sorry, I'm bad about measuring).


Mix everything together and, add salt and pepper to taste.

Serve with crinkle-cut carrots or the vegetable of your choice. :)

    And I'm the same way- rarely use measurements! Sometimes it works out...sometimes it doesn't :)
