Last Week's Meals... and a haircut


Okay, first things first. This has absolutely nothing to do with what we ate last week, but yesterday I chopped off 5-6 inches of my hair.


It was a completely spontaneous decision. Matt's mom had offered to watch Ryan for me so that I could run a few errands (so sweet!) and then I got a call that my hair dresser had a last minute cancellation. So I made my way there and the two of us decided as I was sitting in the chair that a shorter bob with some texture that didn't hit all the way up to my chin (ask me how many times I have gotten that cut and hated it) and angled just a bit was exactly what I needed. My hair dresser literally looked up "textured long bob" on pinterest as I sat there and I picked what I liked. Ha! Gotta love this age of technology (and now I sound 70) that helps mamas like me get a fresh look fast.

Right after she finished, my first thought was that I looked younger, which ironically, really just proves that I'm getting older because never has the phrase, "I look younger" had a positive connotation in my mind.

Anyway, thanks a million for your sweet words on IG! Seriously, y'alls words made this tired mama feel pretty good about herself last night. XO


Now on to what we ate last week...



This was just okay to me. I'm not a huge fan of chili powder though, so I think I'll give it another try with a taco seasoning packet instead. It's definitely worth another try with a few minor changes. 



I realize this looks kind of gross, but it is SO good! Perfect for a weeknight when you don't have a ton of time to prepare a lengthy meal.



I love this meal this time of year! It's got meat for Matt and pasta for me, so it's a win win. :) I served it with these veggies this time, but I've also paired it with steamed carrots before and like that as well.




Thursday night, Matt stayed with Ryan while I went to dinner with some girlfriends at Figo. We had so much catching up without our kiddos that we completely forgot to take a picture.



Friday night, Matt and I went out for his birthday to one of his favorite restaurants, Chop's. It was delicious! 





Man, I really do eat so much pasta. Saturday night, Matt was in Charlotte for the ACC Championship, so after I put Ryan down, I made myself a cheese sauce from scratch and a tall glass of chocolate milk. I am a child.



We just had this a couple of weeks ago, but I had one pork tenderloin left (I buy the 4 pack from Costco and trim and freeze them individually) and the crock pot version of this meal was sounding delicious on Sunday. I served it over Trader Joe's Organic Jasmine Rice (that stuff is so good and cooks in 3 minutes in the microwave!) with broccoli on the side.
