Slow Roasted Pork Loin

I found this recipe on Pinterest recently. It sounded similar to a delicious pot roast that Matt's mom makes, so I couldn't wait to give it a try! It's the first time I've ever cooked pork loin as opposed to pork tenderloin. I really liked how it turned out! I will say it was a little salty, so I would definitely recommend using low-sodium soy sauce instead of the regular, if you have it. But other than that, it was delicious!

INGREDIENTS:
1 (2 pound) boneless pork loin
1 (1 ounce) envelope dry onion soup mix
1 cup water
3/4 cup red wine
3 tablespoons minced garlic
3 tablespoons soy sauce

DIRECTIONS:
Place pork tenderloin in a slow cooker with the contents of the soup packet. Pour water, wine, and soy sauce over the top, turning the pork to coat. Carefully spread garlic over the pork, leaving as much on top of the roast during cooking as possible. Cook on high setting for 4 hours. Serve with cooking liquid on the side as au jus (I added flower to make the sauce a little thicker like Leenie (blogger friend) recommended)

If you don't like red wine, you could use beef broth instead. You can also add a tablespoon of Worcestershire Sauce if you like that flavor. I'm thinking next time a tablespoon or two of honey would be a good addition too. I served mine over rice with a side of broccoli, carrots, and cauliflower. Hope you enjoy!

Sorry, not the best picture. We started inhaling it when it was ready, so this is a mid-bite pic! ;)
