Rigatoni with a Goat Cheese Vodka Sauce




We eat a lot of pasta in our house, so I'm always coming up with new ways to serve it. This recipe is a simple spin-off of one of my favorite dishes- Rigatoni alla Vodka. But it's quick & easy and uses a jar instead of a homemade vodka sauce. If you're feeling creative and want to give the from-scratch version a try, you can find that recipe here.

Ingredients:
2T butter
1 sweet onion, chopped
3 cloves garlic, minced
1 can petite diced tomatoes
1 jar Bertolli Vodka Sauce
1/3 cup milk
2oz goat cheese
1lb rigatoni

Directions:
Saute onions in butter on medium heat until clear (about 10 minutes). Add garlic and tomatoes and simmer for 2 minutes. Add sauce, milk and goat cheese. (I pour the milk in the jar, close the lid, and shake it up before adding it to get the remaining sauce from the jar).

Boil heavily salted water. Cook rigatoni to al dente. Drain and return to pan. Cover with sauce, mix, and serve. Garnish with fresh parmesan.
