Peppermint Brownies


This simple brownie recipe was inspired by the Peppermint Brownie Fudge Trifle I made recently.

The peppermint flavor gives these brownies a refreshing little kick- almost like you're not eating a rich little treat at all. ;)

Ingredients:
1 box of your favorite brownie mix (I like to use Ghirardelli Double Chocolate)
The following three ingredients vary based on the brownie mix:
1/4 cup water
1/3 cup vegetable oil
1 egg
1/2 tsp peppermint extract
1/3 cup crushed peppermints or candy canes

Directions:
Mix water, vegetable oil, egg, and peppermint extract. Add brownie mix and mix until well blended. Spray an 8x8 baking dish with cooking spray. Bake on 325 for 38 minutes.* Remove and allow to sit for 3-5 minutes before cutting.

While brownies are baking, crush peppermint using a food processor (this one is perfect for small jobs).

Sprinkle with crushed peppermint before serving.

*Cook time and temp vary based on brownie mix.


I've also made a double batch of these brownies for a larger crowd using a 9x11 pan and added an extra layer of crushed peppermint in the middle. So tasty and refreshing!
