Chipotle Chicken Panini

A friend of mine made this for me at her house last week and it has since become my new favorite lunch! It is the perfect combination of flavors. I change it just a little each time I make it, but the recipe below has become my favorite.

Ciabatta Bread (found in the bakery section)
Publix Chipotle Chicken Breast, sliced thin (3-4 slices)
Honey Goat Cheese (1 oz.)
Spinach Leaves
Sliced Tomato
Italian Seasoning (approx. 1/4 tsp)

Slice Ciabatta bread in half. Spread goat cheese on one side. It doesn't spread super well, but just spread out the pieces so the bread is mostly covered. Add sliced chicken breast, spinach and tomatoes. Sprinkle Italian seasoning on top.

Grill in panini maker (this is the one I have) until toasted and warm.

I'm also going to add balsamic glaze the next time I remember to buy it at Trader Joe's.
