I found this recipe on Pinterest a few weeks ago and have since made it twice. It is so yummy! It reminds me a lot of the Crispy Cheddar Chicken recipe that I love to make, but this recipe has a great combination of saltiness from the pretzels and sweetness from the honey mustard sauce that makes it unique.
I changed a few of the measurements and added three things: 1- I seasoned the chicken with Cavender's before dipping it in the flour, honey mustard, and pretzels, and 2- I added mayonaise to the honey mustard (maybe 2tbsp?). 3- I garnished it with fresh parsley to make it pretty. :)

Ingredients:
1 cup Panko bread crumbs
1 cup pretzel crumbs
1/4 cup EVOO
1/4 cup dijon honey mustard
1/4 cup honey
1.5T water
1.5T red wine vinegar
2T mayonaise
1/2 cup flour
1/2T Cavender's (or use salt and pepper)
fresh parsley for garnish
Directions:
Preheat oven to 400 degrees (or convection to 375). Spray the bottom of a baking dish with Pam.
Toast Panko bread crumbs over medium heat until golden. Crush pretzels in a blender. Clean out the blender and add oil, mustard, honey, water, vinegar, and mayonaise. Blend until smooth.
Pound the chicken breasts to even thickness and season with Cavender's. Pour flour, pretzels, and most of the dressing in three separate bowls. (Reserve two ramekins of sauce for dipping.)
Dip the chicken in the flour, then sauce, then pretzels, and place in the baking dish.
Bake 20-25 minutes. Let chicken set for 5 minutes. Drizzle with honey mustard, garnish with fresh parsley, and serve.

don't forget to fill two "dipping" ramekins before putting the raw chicken in the bowl of honey mustard sauce!
1- Dip chicken in flour
2- then honey mustard sauce
