I made this over the crazy snow "storm" last week. I needed simple ingredients since Matt, Tally and I were walking to the grocery store to stock up. This recipe requires few ingredients as far as soups go and is so good! You will love it!

Ingredients:
3T EVOO
1 red onion, diced or chopped
3 cloves garlic, minced
Kosher Salt
1- 28oz can Cento crushed tomatoes
1- 32oz. container chicken stock
1- 8oz. container heavy cream
1/3 cup fresh parmesan, grated
1 bunch fresh basil, cut chiffonade
Directions:
Sautee onion in EVOO for 10-15 minutes on medium heat, stirring frequently so that the onions do not burn. Add garlic, sprinkle mixture with salt, and saute for another 3-5 minutes. Add tomoatoes and stock. Bring to a boil and simmer for at least 15 minutes. Add basil, parmesan, and heavy cream. Return to a boil and simmer on low to medium heat for another 15 minutes. Serve with your favorite french bread or grilled cheese.
