Fire Roasted Tomato Vodka Sauce
This recipe is a simple way to fancy-up one of my favorite jarred sauces. The sauce tastes delicious on its own, but adding a few extra ingredients makes it taste even better. You could add your favorite sausage or serve it with grilled chicken or fish to make it a meal. Although I for one think a big plate of pasta is a meal all on its own. ;)
Ingredients:
1 jar Bertolli Vodka Sauce
1 can Hunts Fire Roasted Diced Tomatoes
2 cloves garlic, minced
1/2 sweet onion, chopped
1T extra virgin olive oil or butter
Pinch of baking soda (a very small pinch, just to offset the acidity of the tomatoes)
1/2T sugar (brown sugar could also be tasty!)
Directions:
Saute onion and garlic in olive oil until onion is clear. Add in can of tomatoes. Bring to a boil. Add pinch of baking soda and sugar. Add jar of sauce. Return to a boil and then lower heat and simmer until ready to serve.
I served it over a combination of rotelle and ditalini pasta with fresh parmesan on top.
