Vidalia Onion Chicken Bake

This is one of Matt's favorite dishes- which works out quite well for me since it only calls for three ingredients, or four if you sprinkle the poppy seeds on top.

What you'll need:
Boneless Skinless Chicken Breasts
Vidalia Onion Dressing (I use Ken's or Costco's)
Ritz Crackers
Poppy Seeds (optional)

Directions:
Preheat oven to 350. Trim chicken of excess fat. Place chicken in a baking dish. Poke chicken with a fork multiple times. Pour dressing on top. Crumble ritz crackers on top of dressing. Bake for 35 minutes, or until cutting chicken produces a clear liquid. Serve with your favorite sides. I use Publix Steamable Broccoli and Rice-a-Roni Rice Pilaf.

  1. This looks amazing! I'm a teacher & as my kids were finishing up a quiz one of them came by my desk & said she thought it looked "delish." Quick question though: do you dump the entire bottle of dressing into the pan?

    1. I just cover the chicken and pour enough for dipping too. ;)

  2. This sounds amazing!!! I have a chicken dish that I used crushed up ritz crackers and melted butter for, I try not to make it too much because of the butter aspect, but this is quite different. Thanks for sharing!

  3. I love simple dishes! Definitely will try this one. Does it have an onion-ey taste?? My hubby's not a big fan of onions.
