This is one of our go-to meals during the week. The version I make is so quick and easy. Give it a try and let me know what you think!
2 chicken breasts, cut into bite-sized pieces
1 package Steamfresh broccoli
1 can Campbell's Healthy Request cream of chicken soup
2/3 cup light sour cream
2/3 cup light mayo
2T Sherry cooking wine (optional)
1/2 cup sharp shredded cheese
1/2 cup parmesan cheese (Locatelli is my favorite!)
1/2 tsp salt
1/2 tsp curry powder
Preheat oven to 350 degrees. Placed cubed chicken in mixing bowl. Add mayo and sour cream. Cook broccoli in microwave for 4 minutes. Drain excess water from bag and dump into bowl with chicken. Add remaining ingredients and mix until well blended. Place in rectangular baking dish and bake for 35 minutes, or until center of casserole is bubbling.
