Today, I joined the masses who drive 400 to and from work everyday. Yes, that's right. Today was my first official day back to school.
I feel your pain, little guy.
No kids til next Monday, but still the alarm clock. Notice there have been no exclamations marks in this post (this could quite possibly set a record for me).
I do have to say, it was so fun to be back with all of the great people I work with, but I just don't feel ready for summer to be over! Maybe I can become a famous blogger and professional house wife.
For now, I will share some recipes I've made and been meaning to get on here- quick and easy as always. . . and hopefully delicious too! And since Matt's bringing home a Papa John's Pizza tonight (LOVE him!), this will be my way of killing two therapy birds with one stone: blog about cooking:
Grape tomatoes halved, sauteed in EVOO and garlic
While tomatoes are simmering, cook one box of rigatoni.
"Squish" tomatoes with a fork after 4ish minutes of simmering.
Snuck this from the kitchen window- Matt got the basil for me from our "garden" :)
Use half of this (use the other half for margarita pizza!) and cube it.
Add shredded basil and mozzarella to cooked/drained pasta.
Pour tomato blend on top
Mix
And serve!
Matt gets shrimp on his- I'm working on liking this (it's a texture thing).
Garlic Cheese Bread:
Publix Garlic Bread
Topped with mozzarella and cheddar cheese before baking
Easy Cheesy! (Speaking of. . . couldn't help myself)
And for a lower calorie option. . .
Greek Yogurt with Granola, Agave Nectar, and Blueberries
That pasta looks SO yummy! I love anything that has the combo of tomatoes/basil/mozzarella cheese! yum!
