Whole30 Taco Bowls


Okay, I will be honest. Matt and I love food. We started Whole30 because we wanted to be extra aware of making healthy choices for our bodies and knew that:
 A. We didn't want anything with portion control
B. We weren't trying to lose weight
C. We wanted to learn to eat cleaner
D. 30 days felt manageable

We weren't looking for a complete lifestyle change, just more of an awareness of what we were eating on a week-to-week basis. Ideally, we'd like to come away from these 30 days with new ways to prepare foods we already love, as well as a better understanding of how to read labels on the foods we buy. As we've both said in preparing for this- it's hard to argue against the fact that what you put into your body has a direct impact on how you feel.

So, for the next month, I'll share some of the new recipes we've tried and loved, and I'll also give a rundown at the end of each week with pictures and simple recipes of our daily meals in case you want to give this Whole30 thing a try (and in case we decide to do it again). 


All that said, last night's dinner was GOOOOD. Like, way higher than my expectations of what a Whole30 compliant meal would taste like. 

The flavor in these taco bowls was so yummy, I honestly didn't even miss the sour cream or Gordo's cheese dip. ðŸ˜œ

This is also the first time I've ever used a rice substitute, and y'all, cauliflower rice will definitely be a new staple in our meals. It was GOOD.

So give this recipe a try and tell me what you think! 



Ingredients:
1/2 sweet onion, diced
1/3 cup chopped peppers
2 cloves garlic, minced
1 can lime and cilantro Rotel
1lb ground beef or turkey
2T homemade taco seasoning (recipe here)
16oz. prepared riced cauliflower (recipe here- I left out lemon juice and parsley)*

*You can buy a 16oz. bag of riced cauliflower at Trader Joe's if you don't want to chop your own.

Directions:
Saute onion and peppers in olive oil until soft, about 5 minutes. Add garlic and saute for another minute. Add Rotel, meat, and taco seasoning. Simmer until meat is cooked through, breaking apart into chunks as it cooks.

While meat mixture is cooking, make cauliflower rice according to recipe.

Add prepared rice to a bowl and then add taco meat on top. 

Top with guac (we buy this) and serve with plantain chips.

  2. I've always toyed with the idea of doing Whole30 but could never commit. I'm pregnant right now but maybe after baby comes we will. But I'm looking forward to seeing your recipes and experience and subbing healthier choices on some of our meals!

    1. Congratulations!!! So far we're 6 days in and still committed, hah! My favorite part has been the dinner recipes we've tried so far. I've been really surprised with how much we've liked everything we tried. I'm working on a post for Monday with a recap of the first week and will share recipes for what we've eaten so far. We're learning a lot about cleaner eating, and that was the goal!
