Recent Meals (9 recipes included)


We've tried some new recipes lately that I'm excited to share with you guys today. And I've recently pinned some recipes that I am definitely looking forward to trying in the near future. I love Mix & Match Mamas recipes because they're so simple and require few ingredients. I was excited to try this one and knew Matt would like it too, but y'all I was a little bummed about the flavor. Mainly bummed because I think we might be the only two people who didn't love it. Ha! So I'm sharing it on here because I think it might still be worth you giving it a try. It was just a little too sweet for our tastes. But you might just love it!

These were SO good! I sautéed diced sweet onion in olive oil first, used a taco seasoning packet instead of chili powder, and added a dollop or two of sour cream to the filling before stuffing the tortillas. I think this recipe will be a new favorite in the rotation.

When I made the above enchiladas recipe, I reserved about a 1/3 of the meat mixture (I cooked 1.5 lbs of beef and reserved the mixture of beef, onions, taco seasoning and rotel before the cheddar soup was added). I froze that mixture and got it back out for tacos a few nights late. I layered six small (taco size) tortillas on a baking sheet (sprayed), added the meet on top, covered in with cheddar cheese, and baked them in the oven on 400 for 10-15 minutes. When they were finished, I topped them with shredded lettuce, sour cream, salsa and a bit of cheese dip. We ALL loved these! Ryan was a big fan, and even Tal ended up with on (NOT planned) and seemed quite happy with the recipe. ;) I love a recipe that can be used twice to make two different meals!

Mmmm... this is easily my new favorite pasta recipe. It is SO good! If you feel the need to add meat, grilled chicken or italian sausage, or even chicken sausage would be great on the side or mixed in with the pasta.

Maple  Mustard Hot Dogs

So I'm kind of a closet hot dog lover. Don't ask me why but I don't love for people to know this. But there- I just put it out there. I found this recipe recently and about packed up Ryan to head to the store to get what we needed to make it that night. I now have all of the ingredients, and even though I haven't made it yet (it's on the list for this week's meals), I feel like it's pretty much fail proof for how good it will taste. So there- why don't you give it a try this week too and we can both see what we think?!

These are SO easy. I buy Mrs. T's in the freezer section of the grocery store and follow the oven directions. I've also sautéed them, but if I already have sautéed onions in the fridge from earlier in the week, it is so fast and easy to just pop them in the oven drizzled with a little olive oil. When they're finished, I sprinkle them with cinnamon sugar and we dip them in sour cream. So easy and so yum.

I know crock pot dishes seem like more of a Fall thing, but I think because this one is really just a crock-pot sauce over pasta, it's great any time of the year. And let's be honest, when you're a mom, the crock pot is just great year round.

I've changed this recipe around a bit so that it makes more sauce. And I also always make it with fettuccine now. Mmm it is SO good!

I love this dish because it can be prepared ahead of time and popped in the oven when it's closer to dinner time, and the leftovers taste just as good, if not better, than the original recipe the first night. I was also thinking that if you didn't mind shredded chicken, this could really all be tossed in the crock pot and left to cook all day. I would just reserve the broccoli for the end so that it's not too mushy.

If you've never tried this, now is the time to give it a go while peaches are ripe. Goodness it is so delish!

  3. Great recipes! Thanks for sharing! I've been feeling uninspired with meal planning lately, maybe it's the heat(?) I also forget sometimes how great crock pots are! Again, maybe it's the heat. ;)

  5. I love hot dogs! No shame. I bought a pack of dogs and buns to grill over the long weekend, but we never got around to them. I now have to try to eat a whole pack of buns before they go stale, haha.
