Guest Post Series: A Recipe from Mix and Match Mama



As you may have seen yesterday, we are at the hospital welcoming our sweet baby boy into the world! I'll be back to share pictures and stats and stories once we're home and settled, but today I have a fun new series to share!

I am so excited to begin this series of sharing some of my favorite bloggers with you guys. Each week, I'll be sharing one guest post from one of my favorite bloggers- they'll be covering topics like food, fashion, and travel and letting you get to know them a little bit in their posts- fun right?!

Kicking off the series today is Shay Shull from Mix and Match Mama blog. Shay has two beautiful kids after a long struggle with infertility, is in the process of adopting a sweet girl from another country, and loves to cook as much as I do.

In fact, she recently wrote about being invited to cook for Paula Deen's new network! Ah! Such a dream of mine to cook one of my recipes on TV. I have this vision of one day cooking for Hoda and Kathy Lee on The Today Show. Ahhhh... what a day that would be! 

Right, back to Shay...

Hi!  I'm Shay...otherwise known as the Mix and Match Mama


Each day, I blog simple, easy and yummy recipes perfect for busy families.  Along with my foodie blog, I also have a lifestyle blog where I talk about everything from parenting to traveling, clothes, adoption, infertility, organization and everything in between.

Today, I'm showing you one of our very favorite suppers...turkey burgers!  

My Caprese Turkey Burgers are perfect for summer.  Enjoy!


Shopping List
1 pint of cherry tomatoes
1 pound ground turkey
1 box chopped frozen spinach, thawed and all of the excess water squeezed out
4 thick slices of fresh mozzarella
Basil to garnish
Extra Virgin Olive Oil (EVOO)
Salt and Pepper  
Burger Buns


Preheat your oven to 400 degrees.

On a foil lined baking sheet (makes for easy clean up), spread out your tomatoes.  Drizzle about two tablespoons of EVOO down over the tops of the tomatoes and a liberal amount of salt and pepper.

Roast your tomatoes about 15 minutes.  

While the tomatoes are roasting, make your burgers.  In a medium sized bowl, combine ground turkey and spinach.  Form turkey mixture into 4 burger patties.  

On the outside grill (or indoor grill pan), cook burgers about 8 minutes per side over medium-high heat.   

Remove cooked patties from grill and assemble your burgers.  Top your bun with a patty, a piece of fresh mozzarella, some of your roasted tomatoes, a few torn basil leaves and then drizzle everything with a bit of EVOO and a pinch of salt and pepper.

#nelsendays2014 Week 29


Still no baby, but here's a look at what we've been up to this week!

Day 197: Our sweet nephew Jackson was convinced that there was "a big bouncy ball" in my belly. ;) Haha!

Day 202: Ice-cream date with my sis and her sweet boys! Poor Maddox's head got squished, and I didn't even realize it until I looked at the picture. haha!

Day 203: July 22nd, our due date, came and went and it was still just the three of us. ;) No complaints here though- we know he'll make his appearance soon!

And one more picture of Tally because I think it's hilarious. His new routine is sleeping under our curtains every night. Most nights he sticks just his nose out, like he's creating his own eye mask or something- haha! This pic is him getting prepped to go under for the night. He is such a crazy dog!

Brown, Gray, and Yellow Master Bedroom Makeover!


Ahhh... I cannot tell you how excited I am to have a completed master bedroom! Over the past week, I've loved just sitting in there and taking it all in. 

As you know, if you know us personally or have been around here for a while, this project has been a long time coming. 

After replacing the carpet with hardwoods and finding the right furniture, the room needed finishing: a rug, a few decorations on the wall and dressers, and something for the corner by the tall dresser.

Julie is a long-time family friend of ours. Her older brother and Matt have been best friends since they were four years old.

She also happens to have her own interior design business and is ah-mazing at what she does.

Julie first came by a few months ago when I was needing a sounding board for all of the fabrics I had found for the nursery. She was so helpful and efficient- telling me yes and no to ideas I had without taking away from the vision I had for the room. If anything, she added to what I was envisioning and made it even better than what I was picturing in my mind!

Once I heard that she and her hubby were moving back home after three years in California, I knew she would be the perfect person to help complete the master bedroom. 

With my due date right around the corner, I wanted it done! 

I knew Julie could make it happen quickly and would add a fresh decorative touch to the room by finding pieces I wouldn't have necessarily been drawn to myself, while still matching my "clean and not cluttered" style. Oh and I knew she would make the whole makeover affordable because she shops like me, finding hidden gems at Homegoods, Hobby Lobby, and Target.

So she came over one Friday to take pictures and measurements of the space, and wouldn't you know she was ready to come back and decorate the following TUESDAY?! And when I say decorate, I mean she does it all- she even brings her cute little tool box for hanging pictures and such- I've never seen someone set up a room so fast!

Like I said, ah-mazing.
