For Your Thanksgiving Breakfast: Apple Cinnamon Overnight French Toast


Aside from this breakfast casserole tasting delicious, my favorite thing about it is you can make it the night before and pop it in the oven on Thanksgiving morning. That means not a minute of the Macy's Thanksgiving Day Parade, family time, or other day-of food prep is interrupted and a yummy breakfast is still enjoyed by all.

Ingredients:
1 loaf french bread, cubed
2 apples, peeled and chopped
8 eggs
2.5 cups milk (2% or whole)
8oz cream cheese, softened
1/2 cup butter (1 stick), melted
1/2 cup sugar, divided
1/4 cup brown sugar
2T vanilla, divided
1.5 tsp cinnamon

Streusel:
3/4 cup all-purpose flour
3/4 cup firmly packed brown sugar
1.5 tsp cinnamon
1/2 cup butter, cut into pieces

Directions:
Spray the bottom of a 9x13 baking dish thoroughly. Layer bread and apples on the bottom. Warm butter and cream cheese in a bowl in the microwave until butter is melted and cream cheese is softened (don't forget to cover the bowl!). 

Mix 1/4 cup sugar, brown sugar, 1T of vanilla, and butter/cream cheese mixture until blended and smooth. Pour over casserole.

Mix together eggs, milk, cinnamon, and remaining sugar and vanilla and pour over casserole.

Refrigerate overnight.

When ready to cook, preheat oven to 350. Bake for 35-40 minutes. 

While baking, prepare streusel by mashing together ingredients with a fork until it forms a crumbly mixture.

Remove casserole from oven and crumble streusel on top. Continue baking for 5-10 minutes until streusel in melted over the top.

Serve with warm maple syrup.
