French Dip Sandwiches


I take no credit for this recipe. My friend Meagan shared it with me when I was looking for a new simple meal that would involve little to no work on my part and still taste like I slaved over the oven all day. That would be the goal just about every day, right?!

This meal was SO good. It is a definite addition to our mealtime rotation and perfect for this time of year too.

Ingredients:
2-3lb round roast or chuck roast (just check with the butcher... or in my case meat person at Publix... to make sure it will pull apart easily)
One bottle light beer
One packet Lipton's Onion Dip Seasoning (looks like this)
One can French Onion Soup (I used Campbell's)
4 slices provolone cheese
4 hoagie rolls

Optional:
1/2 sweet onion (cut julienne)
1 clove garlic, minced
1T butter

Directions:
Place roast in the bottom on the crock pot and cover with seasoning packet, beer, and soup. If the meat is not completely covered, add water or stock (beef or chicken) until it covers the meat. (If the meat isn't completely covered, it won't pull apart easily.) Cook on low for 7-8 hours or high for 4-6 hours. Slice bread and place on a baking sheet. You a slotted spoon to scoop the meat onto the bread. (Reserve the rest of the liquid for dipping) Cover with cheese and broil for 3-5 minutes. 

Optional:
About 45 minutes before you're ready to eat, saute onion in butter and garlic. Once the meat has been scooped onto the bread, add onion on top of the meat and cover with cheese before broiling.


This meal was so easy and delicious that it inspired me to want to make my own Philly Cheese Steaks too, so be on the lookout for that recipe in the near future. :)

  4. I am always making this but have been using water instead of beer. Uhhhh what was I thinking! I'm excited to try this!
