Girls' Weekend in Charleston

Friday after school, Stephanie, Andrea, Finn and I left for Charleston to visit two of our other college roommates who live there. We had the best time being together, pretending like we never left Clemson. Although the babies and baby showers were a welcome reality check. ;)

On the drive home, we stopped- at 10:50- for a burger, fries, and milkshake. Too early? Nah.

When I got home, this poor buddy was waiting for me. Matt had to take him to the vet over the weekend because he was in so much pain and wouldn't let anyone look at his foot. Apparently he bent back one of his toe nails (cringe) and cut it when he was playing outside. So it's back to the cone again- but only for 2 days! Poor guy!

Matt and I move his little bed into whatever room we're in, otherwise he hops all over the house trying to stay near us! Sweet buddy.

It didn't take long for him to chew off his little bandage :/ ...look at that guilty face on the left. haha. Matt and I rewrapped it with an ace bandage and are hoping that's not gone when we get home from work today. Such a puppy. So much for the cone!

Well I'm off to shape young minds- or something that resembles an attempt at that.

#Nelsendays2014 Week 2


It's Friday!! ...Right after school, I am heading to Charleston for a girls' weekend, so I will be counting down the hours to 2:45!

Day 8: Tally was extra intrigued by this performance on Ellen

Day 9: A breakfast for dinner kind of night- recipe here

Day 10: Dinner and a movie with this guy ;)

Day 11: Happy 60th birthday to Matt's mama!

Day 12: First time staying home and watching church online; we didn't consider that Tally would want to be in the middle of the service

Day 13: Bachelor viewing with our neighbors, Josh and Lizzie- a.k.a. Hagan's parents ;)

Day 14: Cleaning the house, I had a sweet little shadow waiting for me outside of every room. ;)

Chicken & Cheese Enchiladas

Sometimes, making a few small changes to a recipe can create an completely different meal. (This recipe in a spin off of the White Chicken Enchiladas I shared last summer)

Ingredients:
10 soft tacos
Meat from one rotisserie chicken
2 cups shredded Mexican cheese, divided
1 can Rotel
Sea salt to taste
Sweet onion, diced and sauteed
2 cloves garlic, minced
3T butter
3T flour
2 cups chicken broth
1 cup sour cream
1 (4oz) can diced green chilies
1T EVOO

Directions:
Preheat oven to 350. Grease 9x13 pan. Saute onion and garlic together in EVOO. 

Roux: In a separate pan, melt butter, stir in flour, and cook 1 minute. Add broth and whisk until smooth. Heat over medium heat until thick and bubbly. Stir in sour cream and chilies. 

Mix chicken, onions, garlic, Rotel, salt, 1 cup cheese, and 1/2 cup of roux.

Roll up in tortillas and place in pan. Pour remaining roux over enchiladas and top with remaining cheese. Bake 22 minutes and then under high broil for approximately 3 minutes or until cheese browns.

I also made this recently as a mexican lasagna, using a round pie dish and layering the filling in between tortillas and then topping with the roux and cheese. I used four tortillas in all. It was another fun variation of this recipe.

Weekend Wrap-up: Matt's Mom Turns 60!

I'm wrapping up the weekend today because I was able to turn a doctor's visit yesterday into a whole-day affair. ;) I didn't actually try to do this, but when the only appointment they had was mid- day, and we teachers can only take half days if we can be in by 11:30 or leave by 11:30, I decided I would have to turn my weekend into the a three-day one. Shucks.

Friday night, Matt and I went to dinner and a movie. Dinner at one of our favorite spots, Season's 52, and a movie at another one of our favorite spots, AMC Phipps. We saw Lone Survivor, and I of course lost it when they did a slide show of the fallen soldiers at the end. Such a good movie though.


Saturday morning, K girl came over to help make stuffed shells, homemade marinara , and garlic green beans for Matt's mom's 60th birthday celebration later that night. You can't see it in this picture, but Tally was planted right in between the two of us in case we dropped any ingredients. ;)


Later that morning, we met Matt's parents for a birthday brunch at Joy Cafe.



That afternoon, Andrea and I went to get our nails done, in unplanned matchy-matchy outfits. :)


Saturday night, we celebrated Matt's mom's 60th birthday at Matt's parents' house.

Jackson got a little work done on the computer before the party started. ;)


I loved looking at the pictures that Muggie (Matt's grandma) brought.


I say it's because his cheeks were so stinkin cute and huge, but I don't think I've seen a baby picture of Matt where his mouth was not half open. What a cutie- I hope our kids get those cheeks!

Karen and Matt put together a really sweet frame with a picture of them with their mom as kids, and then we recreated the shot that evening to add to the bottom part of the frame.





Jackson helped Mimi blow out her birthday candles... and sampled the cake while he was at it. :)

Happy birthday, M! We love you!
