5 Easy Recipes for Dinner This Week



As I mentioned on Friday, we've been working through colds and too many new teeth at once in our house so I have been loving some quick and easy meals lately.

Some of these ingredients come from Trader Joe's, but if you don't have a Trader Joe's near you, I'm sure you can find an equivalent at your grocery store.

Roasted Potatoes, Peppers, Onions, and Shrimp 
(you could also substitute chicken sausage for the shrimp)
My friend Andrea told me about this recipe. I will admit, it's not all that pretty, but it was GOOD! And so easy. Get a back of frozen potatoes with peppers and onions (I bought these), roast them in the oven on 400 for 25-30 minutes, flipping half way through. Add in the pepper and onion packet and cook for another 7-10 minutes. Meanwhile, melt 2T butter with 2T lemon juice in a pan. Add thawed shrimp (I buy it deveined and with the tail off to make it quick and easy) and 2T of minced garlic. Cook for 3 minutes on medium heat- just long enough to warm them up. Pour on top of the potato mixture when they're finished and serve with your favorite veggie and either ketchup or remoulade for dipping. I served with roasted asparagus (recipe here)

Cheddar Jalapeño Pasta
I forgot to take a picture of this meal but it turned out to be so tasty! This was another Andrea-inspired dish ;) The question, "what are you making for dinner" has inspired some yummy new meals around here!

1-2 chicken breasts (I used 1 larger breast, frozen)
2T butter
8 oz jalapeño cheddar cream cheese (I bought Publix brand)
1 can cream of chicken soup
1 cup chicken stock
1/3 cup sour cream
1lb farfalle (bowtie) pasta (or any short pasta)

Add the first 5 ingredients to the crock pot. Cook on low for 7-8 hours or high for 4-6 hours. Switch crock pot to warm and shred chicken with two forks. Add sour cream cream and mix. Cook farfalle pasta according to package. Drain, return pan and pour sauce from crock pot on top. Mix together and serve with grated parmesan on top.
